Bloom & Rose is Buffalo's Jew-ish deli. Not Jewish, exactly. Jew-ish. We take the food your bubbe would recognize, treat it with the respect it deserves, and then do a few things she'd raise an eyebrow at. She'd still eat it. She'd probably ask for seconds.

From Knishes...

It Started With a Knish

Back in 2018, we showed up at the Williamsville Farmers Market with knishes: the old-world street food once sold from pushcarts on Manhattan's Lower East Side, and now rarely made fresh and by hand anywhere. Every culture has dough with something delicious inside it. This one happens to be ours, so we gave it an artisan spin, in flavors both classic and ones you didn't see coming.

More than 120,000 knishes later, it's safe to say Buffalo was hungry for it.

Then the Meat Took Over

The knish got us in the door, but smoked and cured meats are our true love. We do them the right way, with time and patience and zero shortcuts. It all comes together in our Reuben: house-cured corned beef on griddled rye with sauerkraut, Swiss, and Russian dressing. It doesn't cut corners, because there's nothing to cut. It's a sandwich with convictions.

For eight years we ran closer to a ghost kitchen than a restaurant. Farmers markets, online orders, takeout, delivery, and catering across Western New York. The food traveled well. But we never got to hand you a plate and watch you take the first bite.

 

Teaching the Craft

School Is in Session

Every deli needs a sage, and ours is Professor Bearcat: scholar of dough, keeper of the fillings, the mentor every hero's journey requires. In his Knish Rolling Classes, the Professor takes you from wide-eyed apprentice to certified knish artisan in a single evening. You'll learn the old ways, roll with your own two hands, and leave with knowledge that pushcart vendors once guarded like treasure. Some students come for the fun. Some come for the carbs. All of them leave changed. Tickets go fast, because wisdom this delicious doesn't wait.

Sticking the Landing

Coming Home to Williamsville

That changes now. We're opening our first sit-down restaurant at 5365 Main St. in Williamsville, right back where it all began. A full bar, seating for more than 60, a patio for the days a sandwich needs a little sunshine, and our deli counter and catering operation running right alongside.

Fast casual, built for the whole family. Something familiar for the New York deli fanatic, something new for the adventurous foodie, and a little nostalgia for everyone in between.

We're open Tuesday through Sunday, 10 a.m. to 5 p.m., for pickup at 27 Chandler St. in Buffalo, with delivery through our site and all the usual apps. Catering? We do that too: private events, corporate orders, and holidays across Western New York.
